Slice 180g cabbage not too thin, not too thick.

Slice 70g onion into strips.

Separate the green and white parts of 5-6 green onion stalks; finely chop the white part and chop the green part.

Mince 2 large garlic cloves and set aside.

Prepare the sauce by mixing 1.5 Tbsp light soy sauce, 2 Tbsp oyster sauce (or 2.5-3 Tbsp soy sauce), 1.5-2 tsp sugar, and 1/2 Tbsp water; mix well and set aside.

Boil water and add 300g udon noodles; cook the noodles for less than the package instructions.

Gently separate the noodles and drain them right away when loosened; toss with 1.5 tsp sesame oil.

Heat a wok or pan on high heat and add 1 Tbsp cooking oil.

Add 180g peeled and deveined prawns to the pan and pan fry briefly, then turn over to pan fry the other side.

Add minced garlic, 1 Tbsp cooking wine (Mirin), a little bit of salt (1/5 tsp), and black pepper (1/3 tsp); mix quickly until shrimp are cooked, then set aside.

Add about 1 tablespoon of oil back to the pan, then add scallion whites and stir fry.

Add sliced cabbage and onion, along with a little sugar (1/5 tsp) and salt (1/5 tsp); stir fry until the vegetables are lightly charred.

Spread the veggies around the wok to get a light char; when the cabbage is nicely colored, add the udon noodles and cooked shrimp back to the pan.

Pour the prepared sauce over the mixture and add chili powder (optional); toss together until the noodles are fully coated.

Taste and adjust salt if needed; add the green onion and mix in.

Place on a serving plate and garnish with spring onion.
