1

Start by selecting a small pan, preferably a cast iron skillet.

2

Add 2 tablespoons of extra virgin olive oil to the pan.

3

Arrange thickly sliced mushrooms in a single layer and sprinkle with salt.

4

Top the mushrooms with sliced red onions and mixed sliced bell peppers (red, Anaheim, jalapeno).

5

Sprinkle one more pinch of salt on top of the vegetables.

6

Place the pan on medium-high heat, or the highest heat setting without flames coming up around the pan.

7

Wait for the mushrooms to start sizzling in the olive oil, allowing moisture to be pulled out.

8

Once the mushrooms are browned, stir in the onions and peppers and cook for about 1 minute.

9

Add spices: ground cumin, smoked paprika, turmeric, dried oregano, freshly ground black pepper, and cayenne; toast for about 30 seconds.

10

Add tomato puree and a splash of water, stirring everything together until it comes to a simmer.

11

Taste the mixture and add a pinch of salt if necessary.

12

Stir in fresh cilantro and crumble in some feta cheese.

13

Make a well in the middle of the mixture and carefully crack in one large egg, sprinkling it with salt.

14

Cover the pan and let it simmer for 3-5 minutes, depending on how well done you want the egg.

15

Once the egg is cooked to your liking, remove from heat and garnish with more crumbled feta, Aleppo chili flakes, a drizzle of olive oil, and freshly torn cilantro leaves.

16

Serve with sliced bread for dipping.
