Originating from coastal regions of Tanzania, Vitumbuwa are delightful rice cakes often enjoyed as a snack or dessert. Traditionally made with rice flour and coconut milk, they reflect the local agricultural practices and the influence of Indian cuisine on Tanzanian food. Today, these treats are popular across East Africa, often found at street markets and special occasions, showcasing the region's love for flavorful, fried delicacies.

Switch on the stove and set it to medium heat.
In a mixing bowl, add 2 cups of flour, 2 teaspoons of baking powder, and half a cup of sugar, then sift together.
Create a well in the center of the dry ingredients and add around 250 mils of room temperature milk.
Mix the ingredients together until the right consistency is achieved.
Prepare a plate with paper towels to drain excess oil from the fritters.
Once the oil is hot, spoon the batter into the oil, ensuring enough space between each fritter.
Fry until golden brown, then flip them over to brown the other side.
Remove the fritters from the oil using a tool to drain excess oil and place them on the paper towels.
Repeat the frying process with the remaining batter, making smaller fritters if desired.
