Warm 100 ml milk and combine it with ¼ tsp saffron, 5 g dry yeast, 42 g sugar, a pinch of vanilla and salt.

Add 62 g softened butter and mix.

After the yeast activates, add 250 g flour and 1 egg white.

Knead the dough for 10 minutes until smooth and elastic.

Cover and let it rise for 1 hour until doubled in size.

Shape the dough into the classic “S” Lussekatter shape.

Let them rest again for 10 minutes.

Brush with a mix of egg yolk + 1 tbsp milk and place a raisin on each swirl.

Bake for 20 minutes at 180°C (356°F) until beautifully golden.
