Remove the fried vadas and drain on paper towels.
In a bowl, whisk yogurt until smooth and creamy.
Soak the fried vadas in warm water for 10-15 minutes to soften.
Gently squeeze out excess water from the vadas and place them on a serving plate.
Drizzle yogurt over the vadas generously.
Add tamarind chutney and green chutney to taste.
Sprinkle chili powder, cumin powder, salt, and sugar over the top.
Garnish with pomegranate seeds, sev, and fresh coriander.
Finish with a squeeze of lemon juice before serving.
