Chayotes Stuffed with Salpicón

4 medium chayotes
1 cup cooked and shredded beef
1/2 cup diced tomatoes
1/4 cup diced onion
1/4 cup chopped cilantro
1/4 cup lime juice
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 cup crumbled queso fresco (optional)

Preheat the oven to 375°F (190°C).

Cut the chayotes in half lengthwise and remove the pit.

Scoop out a small portion of the flesh to create a cavity for the filling.

In a mixing bowl, combine the shredded beef, diced tomatoes, onion, cilantro, lime juice, salt, pepper, and cumin.

Fill each chayote half with the beef mixture, pressing down gently to pack it in.

Place the stuffed chayotes in a baking dish and cover with aluminum foil.

Bake in the preheated oven for 30 minutes.

Remove the foil and sprinkle crumbled queso fresco on top, if using.

Return to the oven and bake for an additional 10 minutes, or until the chayotes are tender and the cheese is melted.
