2 medium sized potatoes
2 to 3 green chilies
1.5 tsp salt
1 tsp coriander powder
1.5 cup green peas
3 tbsp thick yogurt
1.5 tsp garam masala powder
1 large tomato
1 tsp white pepper powder
1 tsp black pepper powder
3 cups water
2 cups soaked rice
1 tsp oil/ghee
4 to 5 green chilies

Heat 1/2 cup oil in a pot.

Add 1 bay leaf, 1 tsp whole cumin, 1 black cardamom, 1 small cardamom, 2 to 3 cloves, 1 small piece of cinnamon, 8 to 10 whole black pepper, 1 star anise, and 1 piece of mace to the hot oil and mix.

Add 1 medium sized onion and cook until light golden.

Add 1/2 tsp ginger garlic paste and cook for 1 minute.

Add 2 medium sized potatoes cut into thick pieces and roast for 1 to 2 minutes.

Add 2 to 3 green chilies paste, 1 to 2 dry red chilies, 1.5 tsp salt, and 1 tsp coriander powder; roast the spices well.

Add 1.5 cup green peas and mix well.

Add 3 tbsp thick yogurt and 1.5 tsp garam masala powder; mix well and cover to cook for 5 to 7 minutes.

After 5 to 7 minutes, remove the lid and add 1 large tomato, 1 tsp white pepper powder, 1 tsp black pepper powder, and 3 cups of water; mix well and cover to boil.

Taste the water and add salt if required; add 4 to 5 green chilies.

Soak 2 cups of rice for 15 to 20 minutes, then add to the pot.

Cover and cook on high flame for 2 minutes, then add 1 tsp oil/ghee and cover to cook on low flame for 10 minutes.

After 10 minutes, turn off the flame and let it sit for 10 minutes before opening the lid and mixing the rice.
