Add diced tomatoes and cook until soft, about 3-4 minutes.
Mix in coriander powder, turmeric powder, and salt; cook for another minute.
Add diced potatoes and green peas; stir well to coat with spices.
Pour in soaked rice and gently mix everything together.
Add water, bring to a boil, then reduce heat to low and cover.
Cook for 15-20 minutes until rice is fluffy and water is absorbed.
Remove from heat and let it rest for 5 minutes before fluffing with a fork.
Stir in garam masala, lemon juice, and chopped cilantro before serving.
