5 crushed shallots (small onions)
3 garlic cloves with skin
1/2 TSP PEPPERCORNS
1/2 TSP CUMIN SEEDS
4 DRUMSTICKS, chopped into 5–6 cm pieces
a handful of fresh coriander leaves
1/8 TSP TURMERIC
1 LITRE VEGETABLE STOCK
1/2 TSP SALT

Sauté the crushed shallots, garlic, peppercorns, and cumin seeds in oil for 30 seconds until fragrant.

Add the chopped drumsticks, coriander leaves, turmeric, and vegetable stock to the pot.

Pressure cook for 5 whistles.

Once cooled, strain the soup and scrape out the drumstick pulp.

Blend the drumstick pulp with the onion-garlic-spice mix until smooth.

Add the blended paste back into the soup, rinse the blender with a little water and pour that in too.

Add salt and bring everything to a gentle boil.
