2 1/2 lb top round or top sirloin beef (1.35 kg)

3 tbsp cornstarch (24 g)
1/4 cup cold water (60 g)
2/3 cup plain 2% Greek yogurt (150 g)
2/3 cup cream cheese (150 g)
1 tbsp Dijon mustard (15 g)

Cut 1 medium onion into a small dice.

Peel and cut 1 lb of carrots into 1-inch pieces.

Add 2 1/2 cups beef broth to the slow cooker.

Add 2 1/2 lb of top round or top sirloin beef to the slow cooker without browning it first.

Cover the slow cooker and cook on high for about 4 hours or on low for 6 hours.

30 minutes before the cooking time is up, add the chopped vegetables to the slow cooker and stir until submerged.

Start boiling a large pot of water over high heat for the pasta.

In a bowl, mix 3 tbsp cornstarch with 1/4 cup cold water to create a slurry.
