In a large bowl, combine 1 and 1/2 cups of white granulated sugar, 1 tablespoon of pumpkin pie spice, 1/2 teaspoon of baking soda, and 2 and 1/2 cups of all-purpose flour and whisk together until well mixed.

Pour in 1 and 1/2 cups of milk and mix until the batter is liquidy, similar to crepe batter.

Pour half of the batter into a greased 8x10 inch baking dish and bake at 350°F for about 20 minutes until a toothpick inserted in the center comes out clean.

Spread 1 cup of apricot preserves over the baked layer.

Pour the remaining batter on top of the apricot layer and bake for an additional 20 minutes until firm and a toothpick comes out clean.

Let it cool and pour 7 oz of melted chocolate on top, spreading it around and allowing it to harden before cutting into rectangle shapes.
