Roughly chop red cabbage and snow peas, removing the ends of the snow peas.

Chop spring onions (scallions) and add to the bowl.

Add chopped COS lettuce and iceberg lettuce to the bowl for crunch.

Cut Mandarin into segments and add to the salad for sweetness.

Add fried noodles for crunch and texture, using two types of noodles.

Sprinkle sesame seeds over the top of the salad.

Poach chicken breast in chicken stock for 7 to 8 minutes until cooked.

Slice the poached chicken breast into rough slices and add to the salad.

Add plum sauce generously to the salad for sweetness.

Add a few splashes of sesame oil for depth of flavor.

Toss all ingredients together until well mixed.

Plate the salad generously, optionally adding white rice noodles on top if desired.
