In a bowl, combine onion powder, garlic powder, mustard powder or seeds, cloves, black cumin, bay leaves, green cardamom, nutmeg, mace, black seeds, coriander, curry leaves, black peppercorns, turmeric powder, dried red chilli, and salt to create a spice mix.
In a large pot, cook the spice mix with water until fragrant.
Add in the black cardamom pod, paprika, roasted chickpeas, pink salt, sugar, cumin seeds, funnel seeds, and star anise to the pot.
Simmer the mixture on low heat for several hours, stirring occasionally.
Serve hot, garnished with additional roasted chickpeas and coriander.
