Prepare a heatproof bowl and place it over a pot of boiling water to create a double boiler.

Add the dark chocolate and coconut oil to the heatproof bowl to melt, stirring occasionally.

In a separate bowl, crack 3 medium eggs and add 3/4 cup coconut sugar. Beat the mixture for 5 to 7 minutes until light and fluffy, tripling in volume.
