Traditionally served at picnics and gatherings, brownies have evolved into countless variations, including those with nuts, frosting, or even swirls of cream cheese. Today, they are a staple in American baking, cherished for their simplicity and indulgence.

Add 1/4 cup ground flax seeds to a large bowl.
Pour in 1/2 cup water and 1/2 cup freshly brewed espresso, then stir to combine.
Add 1 cup granulated sugar, 1/2 cup brown sugar, and 1 teaspoon vanilla extract to the bowl and mix well.
Set up a double boiler by adding a few centimeters of water to a saucepan and bringing it to a simmer.
Place a heatproof bowl on top of the saucepan and add 1 cup unsalted vegan butter and 8 ounces dairy-free dark chocolate to the bowl.
Stir the mixture until the chocolate is melted, then remove the bowl from heat and transfer the contents to the large bowl with the sugar mixture.
Mix everything together until well combined.
Sift in 1 cup all-purpose flour, 1/2 cup Dutch processed cocoa powder, 1 teaspoon baking powder, and 1/4 teaspoon salt into the bowl, then mix until partly combined.
Chop some chocolate into chunks, reserving a handful for later, and add the rest to the bowl, mixing until just combined.
Prepare a metal baking pan by cutting a piece of parchment paper slightly larger than the pan, marking the corners, folding along the markings, and cutting at each corner to fit the pan.
Transfer the brownie batter to the prepared baking pan, smoothing out the top, and sprinkle the reserved chocolate chunks over the top.
Preheat the oven to 350°F (180°C) and bake the brownies for 30 to 35 minutes.
Allow the brownies to cool for a couple of hours at room temperature before cutting, or refrigerate for a fudgier texture.
