Preheat oven to 250°C (480°F).

Season the pork by placing the pork chunks in a large bowl and adding garlic, chicken stock powder, flour, salt, soy sauce, jerk sauce, paprika, black pepper, and thyme. Mix everything well to coat the pork.

Add the bell peppers, onion, and potatoes to the bowl and mix again so everything is evenly coated.

Transfer everything to a cast iron skillet or oven-safe dish, spread out evenly, and cover with foil. Bake for 30 minutes at 250°C.

Remove the foil, lower the oven temperature to 200°C (390°F), and bake uncovered for another 15 minutes, until golden brown on top.
