1 whole Asian sea bass (barramundi fish)
2 tablespoons lime juice
1 tablespoon galangal, finely chopped
3 cloves garlic, minced
2 fresh chillies, chopped
2 tablespoons coriander root, chopped
2 fresh limes, sliced
3 tablespoons fish sauce
2 tablespoons syrup (sugar with water)
1 tablespoon coconut sugar
1/4 cup coriander leaves, chopped

Get water steaming in a pot on low temperature.

Chop garlic and place it in a mortar.

Add galangal to the mortar and pound together with the garlic.

Chop coriander root finely and add it to the mortar.

Cut chillies into smaller bits and add them to the mortar.

Add lime juice to the mortar and mix well.
