Matnakash is a traditional Armenian bread, often enjoyed during special occasions and family gatherings. Its name translates to 'finger bread' due to the dimples made by fingers before baking. This bread is cherished for its soft texture and slightly crispy crust, making it a staple in Armenian households. Today, variations can be found in various regions, showcasing local ingredients and baking techniques.
Combine flour, yeast, sugar, and salt in a large bowl.
Add warm water and vegetable oil to the dry ingredients.
Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 400°F (200°C).
Punch down the risen dough and divide it into equal portions.
Shape each portion into an oval loaf, about 1 inch thick.
Place the loaves on a baking sheet lined with parchment paper.
Using your fingers, create dimples on the surface of each loaf.
Brush the tops with milk and sprinkle sesame seeds generously.
Let the loaves rest for 15-20 minutes while the oven heats.
Bake in the preheated oven for 15-20 minutes until golden brown.
Remove from the oven and let cool on a wire rack.
