1 Cucumber, julienned
1 Carrot, julienned
1/4 cup Cabbage, thinly sliced
2 tablespoons Cilantro, chopped

1 tablespoon Sesame seed oil
2 tablespoons Honey/maple
2 tablespoon Soy sauce
2 teaspoons Lemon juice
1 garlic clove, crushed
1 teaspoon Sesame seeds
1/2 teaspoon Red chili flakes (optional)
Crushed peanuts/cashew

Place the noodles in a large bowl, then cover with boiling water. Allow to soak for 20 minutes.

Meanwhile make the salad: to a large bowl add cucumber, carrot, cabbage, cilantro, mint. Drain the noodles and add to the bowl.

Make the dressing: in a bowl mix sesame seed oil, honey/maple, soy sauce, lemon juice, crushed garlic, sesame seeds and red chili flakes.

Pour the sauce over the salad and mix until well combined.

Chop some roasted peanuts or cashews and sprinkle over the salad (optional).
