1

Beat butter using a hand mixer or using a fork or spoon to cream the butter. Add sugar and beat or mix until mixture is well combined.

2

Add egg and vanilla, mix until well incorporated. Add flour, mix until mixture turns into crumbs.

3

Place dough in a clean work area. Form the dough using your hand and divide the dough into two. Then shape the dough into a log.

4

Wrap dough in plastic wrap and freeze or chill in the refrigerator for 30 minutes or until the dough is firm.

5

When the dough is firm, cut dough about 1/8 inch thick.

6

Arrange dough slices in a baking sheet lined with parchment paper, ensuring each slice is half inch apart.

7

Put it in the toaster oven. Set timer to bake for 7-8 minutes, keeping in mind that the baking time may be shorter for subsequent batches.

8

Watch the cookies while they bake, as toaster ovens bake faster than conventional ovens. If they are browning before the timer goes off, you can pull them out early.

9

If the edges of the cookies turn light to golden brown, they are done. Let them cool before storing in a container.
