Gather ingredients: 1 medium-sized yellow onion, 1/2 cup diced green onion, 2-3 cloves minced garlic, 2 beaten eggs, 1 pound peeled and deveined shrimp, low sodium soy sauce, hoisin sauce, sesame oil, garlic and ginger paste, Kerrygold butter, and avocado oil.

Spread freshly cooked white rice on a baking sheet to air dry for a few minutes.

Pat shrimp dry with paper towels to remove excess moisture.

Season shrimp with all-purpose seasoning and lemon zest if desired.

Heat 1 tablespoon avocado oil and 1 tablespoon Kerrygold butter in a large skillet over medium heat.

Add shrimp to the skillet and cook for about 60 seconds on each side until they are cooked through and have good color; remove shrimp with a slotted spoon.
