1

Alkalize the shrimp by combining with baking soda and water, refrigerate for 15 minutes.

2

Rinse the shrimp under cold water for 2 minutes and pat dry, seasoning with salt.

3

Blanch the shrimp in simmering water for 1-2 minutes until pink and 80-90% done, then set aside.

4

Cook the rice using a 1:1 to 1.1:1 water-to-rice ratio and spread on a baking sheet to cool to room temperature.

5

Heat a dry wok over medium-high heat until smoking, then add oil and swirl to coat.

6

Crack in the eggs and loosely scramble until about 60-70% done, then add the rice.

7

Fold the rice into the eggs and use a cutting motion to separate the grains, keeping it moving constantly.

8

Sprinkle the House Seasoning over the rice and stir-fry until fully incorporated.

9

Add the blanched shrimp and chopped scallions, tossing until heated through, then remove from heat.

10

Pack the shrimp at the bottom of a bowl, top with fried rice, and flip onto a plate to serve.
