Soak salted cod in water for at least 24 hours, changing the water 2-3 times to reduce saltiness.
Preheat the oven to 170 degrees Celsius.
Cut potatoes into thin sticks and rinse them to remove starch, then pat dry with a towel.
Place the potato sticks on a tray and put them in the oven.
Cut onion into half moons and separate the pieces.
Slice garlic cloves.
Boil water in a pan and add the salted cod, cooking for 10 minutes without adding salt.
Remove the cod from the water and let it cool slightly, then flake it and remove any bones.
Heat 2-3 tablespoons of olive oil in a pan over medium heat and add the onions, cooking slowly until translucent.
Add a bit of salt and pepper to the onions while cooking.
Once the onions are translucent, add the sliced garlic and a bay leaf, cooking until fragrant.
Add the flaked cod to the onion mixture and stir gently for a couple of minutes.
Add the fried potatoes to the cod and onion mixture, stirring gently to combine without breaking the potatoes.
Season the mixture with more salt and pepper as needed.
Crack 3 eggs into a bowl and whisk them, then pour over the mixture and stir slowly until the eggs are just set.
Add the black olives and half of the parsley, mixing gently before serving.
