1

Prepare 450 g of bột nếp chín and set aside.

2

Measure 900 g of sugar and 250 ml of water, mix them in a pot without heat to dissolve the sugar.

3

Turn on the heat to medium and let the sugar water boil for about 10 minutes until it becomes clear.

4

Add 8 ml of lemon juice to the boiling sugar water and increase the heat to high for 45 seconds to 1 minute, then turn off the heat and let it cool completely.

5

Combine the cooled sugar water with the bột nếp chín in a mixing bowl.

6

Add half a teaspoon of dầu hoa bưởi and three teaspoons of a special vegetable fat (mỡ rau cải) to the mixture.

7

Mix the ingredients together using a mixer on low speed, gradually adding the bột nếp until fully incorporated, adjusting with more bột if necessary until the dough is smooth and slightly sticky.

8

Cover the dough and let it rest for several hours or overnight in the refrigerator.

9

Prepare the đậu xanh by rinsing and soaking it overnight, then boil it in 750 ml of water for 12-15 minutes until soft.

10

Add 160 g of sugar to the cooked đậu xanh and mix well, then blend it with half a liter of water until smooth.

11

Cook the blended đậu xanh in a pan over medium heat, stirring until it thickens, about 25 minutes.

12

Add two tablespoons of bột bắp and 25 ml of oil to the thickened đậu xanh, mix well and cook for an additional 5 minutes until it is drier.
