1

Start with large eggs for more yolk.

2

Place the eggs in a pot and cover them with cold water.

3

Turn the stove on to heat the water.

4

Once the water comes to a boil, set a timer for 8 minutes.

5

After 8 minutes, immediately take the eggs out of the water and place them into an ice bath for about 5 minutes.

6

Wipe down your knife with a wet towel in between each cut when slicing the eggs.

7

Use a food processor to make the filling, adding a little bit of water, a lot of mayonnaise, and your seasonings.

8

Optionally, add some of the broken egg whites to the filling for texture.

9

Once the filling is ready, place it into a plastic baggie and cut the corner off to pipe it into the egg whites.

10

Garnish the eggs with paprika, chives, bacon, smoked salmon, capers, or roasted peppers.
