Start by preparing 2 pounds of peeled and deveined raw shrimp.

In a bowl, mix 2 teaspoons of garlic powder, 2 teaspoons of cumin, 2 teaspoons of oregano, and 2 teaspoons of light chili powder or smoked paprika. Season the shrimp with this spice blend and let it sit.

Chop and dice one red bell pepper, one green bell pepper, and one yellow bell pepper. Also, chop 2 garlic cloves, and half of a red onion. Chop one bush of cilantro.

Dice one avocado and squeeze a little lemon juice on it to prevent browning.

In a hot pan, add 2-3 tablespoons of olive oil and the chopped veggies and garlic. Season with salt, pepper, and a little cumin. Cook for about 2-3 minutes until tender, then set aside on a plate.

In the same pan, add 2 tablespoons of olive oil and 3 tablespoons of unsalted butter. Once melted, add the seasoned shrimp, sprinkle with salt and pepper, and cook for about 2 minutes on each side until they are opaque.

Set the heat to low and add back the cooked veggies to the shrimp, or serve them separately. Squeeze one whole lime over the shrimp and set aside.

In the same pan, add more oil and heat it up. Add corn or flour tortillas and fry them slightly until they get a little hard but still pliable.

Add quesadilla cheese to the tortillas and cover to help melt the cheese. Ensure the heat is low to avoid burning the tortillas.

Assemble the tacos by adding cabbage slaw mix, Roma tomatoes, avocado, cilantro, creamy avocado cilantro lime sauce, Mexican crema, and cotija cheese.
