Prepare the broth by adding one vegetable seasoning cube to one cup of boiling water and stirring to combine.
Add the broth to the TVP and fluff with a fork.
In a blender, combine the TVP, half a can of white beans, black garlic, garlic salt, paprika, onion powder, black pepper, steak seasoning, and a pinch of sea salt. Pulse three times to combine until crumbly and wet.
Mix in the vital wheat gluten and knead the mixture with your hands for 2-3 minutes until it forms a stretchy dough.
Press each piece of dough out until it resembles a thin steak, approximately 1/4 inch thick.
Cook the steaks over medium-high heat in a skillet for about 10 minutes, then remove from heat and let cool.
Prepare the gravy by blending 1/2 cup of white beans until smooth and setting aside.
In a cast-iron skillet over medium-high heat, add vegan butter or olive oil, garlic, and diced onions, cooking until translucent.
Whisk in 1 and 1/2 tablespoons of all-purpose flour, then gradually add 1 cup of water and 3/4 cup of unsweetened non-dairy milk.
Add the blended bean mixture and mushrooms if desired, stirring until the gravy thickens to the desired consistency, seasoning with salt and pepper to taste.
Prepare the coating by whisking together flour, spices, and baking powder.
Make a flaxseed egg by mixing 3 tablespoons of ground flaxseed with 6 tablespoons of the bean reserve (aqua fava) and whisk into the plant-based milk.
Coat each steak piece in the flour mixture, then in the flaxseed batter, and repeat until completely coated.
Let the coated steaks sit for about 10 minutes while heating vegetable oil in a large cast-iron skillet over medium-high heat, ensuring the oil is about 1/4 inch deep.
Fry the steaks in the skillet for about 3-4 minutes on each side until golden brown.
