Press frozen tofu in a tofu press for at least 30 minutes or overnight to remove liquid.
If no tofu press is available, wrap tofu in a kitchen towel, place a heavy object on top to press out liquid.
In a pot, combine brown sugar, agave, pineapple juice, Dijon mustard, liquid smoke, cinnamon, ginger, cloves, black pepper, and vegan ham flavoring.
Whisk the mixture until smooth and well combined.
Remove the pressed tofu and pat it dry with a paper towel.
Cut the tofu into four pieces by cutting in half and then cutting each half in half again.
Create a shallow cross-hatching pattern on the top of each tofu piece without cutting all the way through.
Spread about a third cup of the sauce evenly over the bottom of a casserole dish.
Layer the tofu pieces inside the dish and brush the tops and sides with the sauce, ensuring no white spots remain.
Place pineapple slices over the top of the tofu.
Bake in the oven, pulling it out every 15 minutes to brush more sauce over the top to keep it moist and add flavor.
Heat any leftover sauce to 200°F before pouring it over the dish when done.
Note that adding pineapple will result in a lighter color on the tofu compared to not adding it.
