Take 5-6 small tomatoes and wash them clean.

Cut off the top of each tomato and scoop out the insides using a round spoon.

Prepare the stuffing by mixing chopped onions, coriander leaves, roasted peanut powder, ginger-garlic paste, turmeric powder, garam masala, red chili powder, coriander powder, and salt in a bowl.

Add 1-2 tablespoons of oil to the stuffing mixture and mix well.

Apply a pinch of salt inside each scooped tomato to prevent them from getting bland.

Stuff each tomato with the prepared mixture, pressing down gently to fill them completely.

In a small pan, heat 2-3 tablespoons of oil and add mustard seeds to let them splutter.

Add cumin seeds, asafoetida, and curry leaves to the hot oil.

Carefully add the stuffed tomatoes to the pan and cover it with a lid.

Cook on low heat for 2-3 minutes, then gently turn the tomatoes and cook for another 2-3 minutes until they are well cooked and have grill marks.

After about 7-8 minutes of cooking, check if the tomatoes are tender and cooked through.

Garnish with chopped coriander leaves and serve hot with chapati, bhakri, or rice.
