First, slice the ends off of your plantain, and peel it.

Now slice the plantain into small circles about a half-inch thick.

In a pan, pour in your canola oil, and place your plantain slices in the oil, frying them. Flip once the cooking side is golden brown.

With a pair of tongs, take your plantain slices out of the pot and onto your cutting board. Use a spatula to smash and crush the plantains.

Once smashed, put back in the oil and fry some more. Then remove from the oil and plate the plantains.

Now season with a pinch of salt, some fresh black pepper, and some paprika, finally some Fresh Parsley for garnish and voila!
