Pumpkin with Chicken Stew

1 medium pumpkin (about 3-4 lbs)
1 lb chicken thighs, boneless and skinless
1 medium onion, chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup diced tomatoes (canned or fresh)
1 tsp ground cumin
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1/4 cup fresh parsley, chopped (for garnish)

Cut the pumpkin in half and remove the seeds and stringy insides. Cut the pumpkin into cubes.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.

Add the chicken thighs to the pot and cook until browned on all sides.

Stir in the diced tomatoes, chicken broth, cumin, paprika, salt, and pepper. Bring to a boil.

Reduce the heat to low, cover, and let it simmer for about 20 minutes.

Add the pumpkin cubes to the pot, stir well, and cover again. Cook for an additional 15-20 minutes, or until the pumpkin is tender and the chicken is cooked through.
