Broiled Miso Salmon

1 pound salmon
1 pound Napa cabbage
1 Sano pepper
2 tablespoons miso
4 tablespoons mirin
1 teaspoon to 1 and 1/2 teaspoons sweetener (maple brown sugar syrup)

Preheat the broiler on high.

Place the oven rack on the second rack from the top.

Prepare a baking sheet with parchment paper for the cabbage and salmon.

Cut the Napa cabbage into pieces about 3/4 of an inch thick and spread it out on the parchment paper.

In a bowl, mix 2 tablespoons of miso and 4 tablespoons of mirin.

Add 1 teaspoon to 1 and 1/2 teaspoons of maple brown sugar syrup to the miso mixture and mix well.

Brush the miso marinade onto the Napa cabbage.

Place the salmon on the baking sheet and brush the miso marinade generously on all sides of the salmon.

Place the baking sheet with the cabbage and salmon in the oven under the broiler for 7 minutes.

While the salmon and cabbage are cooking, slice the Sano pepper and soak it in a little rice wine vinegar.

After 7 minutes, carefully turn the salmon and check for doneness; it should have a golden crispy topping and the skin side should be crispy as well.

Cook the salmon skin side down for an additional 4 minutes under the broiler.

Remove the salmon and cabbage from the oven and let cool slightly before serving.
