1

Preheat the oven to 450 degrees Fahrenheit.

2

In a baking tray, place all the chicken pieces.

3

Add the cut potatoes around the chicken.

4

Add the finely chopped onion first, followed by the grated garlic.

5

Sprinkle in 1 teaspoon of ground cumin, crushed red pepper flakes, and 2 heaping teaspoons of dried oregano.

6

Season with 2 teaspoons of salt and freshly cracked black pepper.

7

Drizzle olive oil over the mixture.

8

Pour in the pureed canned tomatoes and add a pinch of sugar.

9

Add 1/2 to 1 cup of chicken broth.

10

Add 1 to 2 tablespoons of harissa sauce to the mixture.

11

Mix everything together until well combined.

12

Crumble a piece of parchment paper and place it over the tray to cover it.

13

Bake in the oven for 30 minutes covered with parchment paper.

14

After 30 minutes, remove the parchment paper and give the dish a nice mix.

15

Put it back in the oven uncovered and bake until the chicken is cooked and the potatoes are tender, about another 45 minutes.

16

Check for doneness; the potatoes should be fork-tender and the chicken fully cooked.

17

Let it sit for a few minutes to allow the sauce to thicken as the potatoes absorb the liquid.

18

Taste and adjust seasoning with more salt and pepper if needed.

19

Sprinkle freshly chopped parsley on top before serving.
