1

Soak black-eyed peas and red peas overnight or for a few hours before cooking.

2

Wash the beef and season it with green seasoning and dry seasoning; let marinate for 1-2 hours.

3

Heat the pressure pot on sauté mode and add oil, then add the marinated beef to sauté until seared.

4

Add about 1 tablespoon of cashew color to the beef for color.

5

Add soaked red peas to the beef and 1/4 cup of water; pressure cook for 20 minutes.

6

After 20 minutes, check the peas and beef; they should be soft but not overcooked.

7

Add par boiled rice, onions, cilantro, black-eyed peas, and cook-up seasoning to the pot.

8

Add coconut milk powder directly to the pot without diluting it.

9

Mix everything well and add about 2 cups of water, adjusting for desired consistency.

10

Set the pressure pot on the grain setting for 12 minutes to finish cooking.

11

After cooking, remove thyme sprigs and add frozen spinach and scallions; cover to wilt the spinach.
