Pork shoulder is often less expensive and provides a similar texture.
Dice the corned beef brisket and wash it.
Trim the fat from the beef, wash it, and pat it dry.
Heat 2 tablespoons of oil in an electric pressure cooker.
Add the diced beef to the pressure cooker and cook for about 5 minutes.
After 6 minutes, add half a cup of water to the beef and cover it with the lid.
Set the pressure cooker to the meat stew setting and cook for 25 minutes.
Prepare the other ingredients while the beef is cooking: wash and drain the brown rice, and gather chickpeas, kidney beans, coconut milk, cook up seasoning, baby spinach, scallions, tomato paste, dry thyme, cilantro, carrots, garlic, celery, onion, and one word pepper.
After 25 minutes, add the washed brown rice, spices, onion, celery, garlic, carrots, cilantro, tomato paste, chickpeas, and kidney beans to the beef in the pressure cooker.
Add the drained liquid from the kidney beans to the pot, along with the coconut milk and additional water.
Mix everything together and taste for salt, adjusting if necessary.
Set the pressure cooker to the rice setting and cook for 12 minutes.
After 12 minutes, add the baby spinach and scallions to the pot, mixing them in to steam with the residual heat.
Let the cook up cool down to thicken before plating.
