Dahi Tadka Rice, also known as Curd Rice, is a beloved dish from South India, often served as a cooling accompaniment to spicy meals. Traditionally, it is made with leftover rice mixed with yogurt and tempered with spices, making it a comforting and nutritious option. In many households, it is a staple during hot summer months, providing relief from the heat. Today, variations exist across India, with some adding seasonal vegetables or garnishes, reflecting local tastes and preferences.

Soak the rice for one hour and then drain it.
In a bowl, add 1.5 bowls of soaked rice and 2 bowls of yogurt.
Mix the rice and yogurt thoroughly for about five minutes until well combined.
Heat 1 tablespoon of oil and 2 tablespoons of ghee in a pan until hot.
Add 1 teaspoon of mustard seeds and 1 teaspoon of urad dal to the hot oil and let them pop.
Once they pop, add 1 tablespoon of garlic and sauté until it turns red.
Add red chili powder and mix well.
Turn off the heat and add curry leaves to the mixture.
Pour the tempering mixture over the yogurt rice and mix gently.
Add a little more salt to taste and mix again.
Garnish with finely chopped green onions before serving.
Serve in a clay pot and let it cool for two hours before eating.
