Prep the Brussels sprouts by trimming the base and peeling off any outer leaves.
Slice the Brussels sprouts in half to ensure even cooking and quicker cooking time.
Dunk the Brussels sprouts in cold water to remove any dirt.
Boil a large pan of water and add salt, then add the Brussels sprouts and cover with a lid.
Bring the pan back to a boil as quickly as possible and cook the Brussels sprouts for 3 minutes.
Prepare a bowl of ice water to refresh the Brussels sprouts after boiling.
After 3 minutes, transfer the Brussels sprouts to the ice water and let them chill for 10 minutes.
Drain the Brussels sprouts from the ice water.
Make a dressing by zesting one orange and squeezing in its juice.
Add 100 g of dried cranberries, 50 ml of olive oil, 1 teaspoon of thyme leaves, 1 dessert spoon of honey, and a pinch of salt to the bowl and stir together.
Toast walnuts over medium to low heat, moving them regularly to avoid burning.
In a bowl, mix the drained Brussels sprouts with a little olive oil and some salt.
Heat a large frying pan on high heat and add the Brussels sprouts, placing them flat side down for maximum flavor.
Cook the Brussels sprouts until they are well charred, then add the dressing and toasted walnuts, stirring to coat everything well.
Serve the Brussels sprouts in a dish for sharing.
