Take Brussels sprouts out of the freezer and thaw them in cold water for about an hour and a half.
Chop 6 pieces of thick cut bacon into small pieces.
Heat a skillet over medium-high heat and add the chopped bacon, cooking until golden brown.
Chop a small amount of red onion into small pieces.
In a separate pan, add a tiny bit of oil and sauté the chopped onions until soft, without achieving color.
Cut the Brussels sprouts in half.
If using fresh Brussels sprouts, boil them in salted water for about 7 minutes, then shock them in an ice bath to stop the cooking process.
Once the bacon is golden brown, use a slotted spatula to remove it from the pan and drain on paper towels, reserving some bacon grease in the pan.
Dab the Brussels sprouts with paper towels to remove excess moisture to prevent splattering when cooking.
Add the Brussels sprouts to the hot pan with bacon grease, ensuring they are lined up upside down first for even cooking.
