Make hot honey by combining honey, apple cider vinegar, Frank's Red Hot Sauce, and crushed red pepper flakes in a saucepan.
Bring the mixture to a low boil over low or medium-low heat for about 5 to 7 minutes, stirring frequently.
Turn off the heat and let the hot honey sit for about 30 minutes.
Preheat the oven to 400°F.
Trim the edges of the brussels sprouts and slice them in half.
Dice half a cup of yellow onion finely.
Slice 4 slices of bacon into 1-inch pieces.
Add the halved brussels sprouts to a cookie sheet and spread them out slightly.
Toss the brussels sprouts with olive oil and salt until well coated.
Roast the brussels sprouts in the oven at 400°F for about 20 to 25 minutes, flipping them halfway through cooking.
Cook the bacon in a skillet over medium-low heat for about 5 to 7 minutes until crispy.
Add the diced onion to the skillet with the bacon and cook for another 3 to 4 minutes until the onions are softened.
Strain the hot honey using a small colander into a jar, pressing down on the red pepper flakes to extract all the honey.
Once the brussels sprouts are roasted, add them to the bacon and onion pan, leaving any charred pieces on the cookie sheet.
Drizzle a little less than a tablespoon of hot honey over the brussels sprouts and mix gently.
Transfer the mixture to a casserole dish and drizzle a little more hot honey on top before serving.
