Traditionally made with beef and a medley of colorful peppers, this dish reflects the influence of African, Spanish, and indigenous Taino cooking. It is often enjoyed as a hearty meal, served with rice or fried plantains. Today, variations can be found across the Caribbean and beyond, adapting to local tastes while maintaining its spicy essence.

Cut the red, yellow, and green bell peppers into long strips.
Cut a small carrot into thin pieces.
Cut half an onion into slices.
Slice the steak thinly using a sharp knife, ensuring no fat is present.
In a bowl, add olive oil to the steak and season with black pepper, mixing well.
Prepare a sauce by mixing just over 1 cup of warm water with 1 tablespoon of dark soy sauce, 1/4 cup of ketchup, and 1 teaspoon of brown sugar; stir to combine.
Heat just over 1 tablespoon of olive oil in a pot over medium heat.
Add the seasoned steak to the pot, spacing it out, and fry for 4 minutes on each side until browned; remove and set aside.
In the same pot, sauté sliced onion, garlic, and tomato on low heat for 30 seconds.
Add fresh thyme and carrot to the pot, sautéing for an additional 15 seconds.
Add bell peppers, ginger, and pimento seed, sautéing for 10-15 seconds.
Pour the prepared sauce into the pot and bring it to a boil; taste and adjust seasoning if necessary.
Add the cooked steak back into the pot, mixing everything together; cook briefly as the steak is already thin and cooked.
Add remaining scallion, fresh thyme, and scotch bonnet pepper; optionally add more dark soy sauce for color.
Add 2 teaspoons of honey and remaining bell peppers, leaving the pot uncovered to avoid excess liquid; cook for 6 minutes until ready.
