Start by preparing to make spam at the butcher shop.
Grind pork trim and bits of homemade ham using a meat grinder.
Grind the meat twice through a large dye, then twice through a medium dye, and finally through a small dye.
Add ice to the meat mixture while grinding to keep it cool.
Mix in spices: salt, white pepper, paprika, and sugar during the final grind.
Incorporate potato starch to absorb excess moisture from the ice.
Check for tackiness in the mixture to ensure proper emulsification.
Form the spam mixture into balls and pack them into a mold, ensuring no air bubbles are present.
Wrap the mold and place it in the walk-in refrigerator to chill before cooking.
Later, the spam will be cooked in the oven.
