1 teaspoon oregano
1 teaspoon paprika
0.5 to 1 teaspoon cumin
2 tablespoons curry powder
1 cup tomato sauce
coconut milk (optional)

Wash the chicken with lemon, vinegar, or tap water. Remove the skin from the chicken thighs and drumsticks.

Cut a medium onion into pieces.

Heat a little oil in a pan and sauté the onion for a couple of minutes.

Add 1 cup of sofrito to the sautéed onions. (Sofrito is made from onions, peppers, fresh garlic, cilantro, and sweet peppers blended together.)

Add the chicken to the pan with the sautéed onions and sofrito.

Season the chicken with approximately 1 tablespoon of seasoning salt, 1 teaspoon of garlic powder, 1 teaspoon of oregano, 1 teaspoon of paprika, and 0.5 to 1 teaspoon of cumin.

Add 2 tablespoons of curry powder to the chicken mixture.

Cover the pan and cook the chicken on low heat for approximately 20 minutes.

After 20 minutes, add 1 cup of tomato sauce to the chicken and stir.

(Optional) Add coconut milk to the chicken for additional flavor, but note that it won't taste like coconut.

Cover the pan again and let it cook for another 20 minutes.

Serve the curry chicken with white rice.
