1.5 lbs chicken cut into medium-sized pieces
1 Jamaican hot pepper, chopped
1 teaspoon thyme
1 medium onion, chopped
3 cloves garlic, minced
1 cup assorted sweet peppers, chopped
2 medium potatoes, diced
2 medium carrots, sliced
1 teaspoon sea salt
1 tablespoon Jamaican all-purpose jerk seasoning
2 tablespoons better pack curry powder
2 tablespoons vegetable oil
1 cup water
1 tablespoon cornstarch

In a pan, add cleaned chicken cut into medium-sized pieces.

Add Jamaican hot pepper, thyme, onions, garlic, assorted sweet peppers, potatoes, carrots, and a little sea salt.

Add Jamaican all-purpose jerk seasoning carefully due to its salt content.

Add better pack curry powder and mix well.

Heat a Dutch pot and add vegetable oil.

Add the mixture from the pan into the hot Dutch pot and mix it up.

Cover the pot firmly and let the chicken spring its own water without adding any liquid.

Check the pot every 10 minutes, stirring to prevent sticking.

After about 10 minutes, check for liquid; if the chicken has released enough water, add half a bottle of water.

Mix the water in and cover the pot again to let it cook.

After about 25 minutes, check the chicken; it should be making gravy.

If the gravy is not thick enough, add a little cornstarch and mix gently.

Cover the pot and let it simmer for about 3 minutes until ready.
