Cut the whole chicken into small pieces.

Wash the chicken with lime to clean it.

Season the chicken with sea salt, black pepper, jerk seasoning, all-purpose seasoning, pimenta seeds, and curry powder.

Blend fresh herbs and spices: scallion, thyme, garlic, onion, pimenta peppers, and Scotch bonnet pepper to create a green seasoning.

Add 2-3 tablespoons of the green seasoning to the chicken and mix well to coat.

Allow the chicken to marinate for about 30 minutes or proceed to cooking immediately.

In a thick pot, heat some cooking oil and toast the curry powder until fragrant.

Add chopped garlic and onion to the pot and sauté until aromatic.

Add the seasoned chicken to the pot and mix well to distribute the flavors.

Cover the pot and cook on low heat for about 5-7 minutes to allow the chicken to create its natural juices.

After 7 minutes, check that no liquid was added and the chicken has released its juices.

Cover again and cook for another 5 minutes, totaling 12 minutes of cooking in its own juices.

Add pimenta peppers, chopped carrot, and potatoes to the pot.

Add fresh thyme and a whole Scotch bonnet pepper for flavor.

Pour in water to achieve desired gravy consistency.

Cover and cook on low heat for an additional 10 minutes, bringing total cooking time to about 25 minutes.
