2 tablespoons vinegar
1 lemon, juiced
1 cup sweet pepper
1 teaspoon black pepper
1 tablespoon ginger
4 cloves garlic
1 teaspoon pimento
1 cup carrots, chopped
1 cup white onion, chopped
1 teaspoon thyme
1/2 cup scallion, chopped
2 tablespoons better pack curry powder
1 scotch bonnet pepper, chopped
1 tablespoon salt
1 cup Irish potatoes, diced
2 cups water

Wash and cut the chicken, using vinegar and lemon for cleaning.

Add scallion, chopped carrots, sweet peppers, white onion, fresh garlic, and two packs of better pack curry powder to the chicken.

Massage the chicken with the seasonings, ensuring everything is well combined.

Cover the chicken and let it marinate for one hour.

After marinating, separate the seasoning from the chicken and add the chicken to a hot Jamaican Duchy pot without oil.

Cover the pot and let the chicken spring its own juices for 15 minutes.

After 15 minutes, pour hot water over the chicken until it is just covered, then stir.

Cover the pot again and let it cook for another 15 minutes.

Dice the Irish potatoes and add them to the pot, stirring to combine.

Pour hot water from the kettle into the pot to extract all the curry juice, then cover and cook for 10 minutes.

After 10 minutes, add a little salt and stir to dissolve it in the pot.
