Place the yellow split peas in a large bowl and cover with cold water. Leave to sit overnight and soak.

Drain, then place into a food processor. Blitz until coarse and clump together.

Add peas to a mixing bowl with the salt, pepper, turmeric, chilies, coriander and spring onions and combine well.

Scoop the mixture in your hands, turning and forming into a ball – around the size of a golf ball.

Repeat with the remaining mixture and set aside.

Heat a large pan with oil / deep fryer.

Once hot, fry off each cake for around 3 - 4 minutes / until golden and crispy.

Drain and serve inside a warm buttered crusty roll, with cheese.
