Heat 1-1.5 tablespoons of ghee in a pan.

Add 1/2 cup semolina and roast on low heat for 5-7 minutes until it changes color and smells fragrant.

Add another tablespoon of ghee and 1 cup grated coconut, roast lightly.

Peel and grate the bottle gourd (lauki).

In the same pan, add 2 tablespoons of ghee and sauté the grated bottle gourd for 3-4 minutes until the moisture evaporates.

Add 1/2 cup milk powder and 1 liter of full-fat milk to the pan.

Stir in 1/2 cup sugar, adjusting to taste, and optionally add green food color.

Mix in the previously roasted semolina and coconut, and cook on low heat until thickened, about 3-4 minutes.

Once thickened, pour the mixture into a greased tray and spread evenly.

Top with chopped almonds and pistachios, pressing them lightly into the mixture.

Allow to cool and set before cutting into pieces.
