Ingredients

Instructions

  1. 1Preheat your oven to 450°F (230°C).
  2. 2Separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in separate small bowls.
  3. 3Using an electric mixer, beat the egg whites on high speed until stiff peaks form, about 3-5 minutes.
  4. 4Gently fold in the salt, pepper, and cheese (if using) into the whipped egg whites.
  5. 5On a baking sheet lined with parchment paper, spoon the whipped egg whites into cloud shapes, creating a small well in the center of each cloud for the yolk.
  6. 6Bake the egg whites in the preheated oven for 3-4 minutes until they are lightly golden.
  7. 7Remove the baking sheet from the oven and carefully place a yolk in the center of each cloud.
  8. 8Return to the oven and bake for an additional 3-4 minutes, or until the yolks are set to your liking.
  9. 9Remove from the oven and garnish with chives if desired.
  10. 10Serve immediately.

Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lime juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • Fresh cilantro for garnish

Instructions

  1. 1Place the eggs in a saucepan and cover them with water. Bring to a boil over medium heat.
  2. 2Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12 minutes.
  3. 3After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.
  4. 4Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  5. 5Add the avocado, mayonnaise, Dijon mustard, lime juice, salt, and black pepper to the yolks. Mash together until smooth and creamy.
  6. 6Spoon or pipe the avocado mixture back into the egg white halves.
  7. 7Sprinkle with paprika and garnish with fresh cilantro before serving.
