Instructions
- 1Preheat your oven to 450°F (230°C).
- 2Separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in separate small bowls.
- 3Using an electric mixer, beat the egg whites on high speed until stiff peaks form, about 3-5 minutes.
- 4Gently fold in the salt, pepper, and cheese (if using) into the whipped egg whites.
- 5On a baking sheet lined with parchment paper, spoon the whipped egg whites into cloud shapes, creating a small well in the center of each cloud for the yolk.
- 6Bake the egg whites in the preheated oven for 3-4 minutes until they are lightly golden.
- 7Remove the baking sheet from the oven and carefully place a yolk in the center of each cloud.
- 8Return to the oven and bake for an additional 3-4 minutes, or until the yolks are set to your liking.
- 9Remove from the oven and garnish with chives if desired.
- 10Serve immediately.
