This fiery chili paste reflects the region's love for bold flavors and is integral to many meals, enhancing dishes with its spicy, tangy profile. Today, sambal has many variations across Southeast Asia, each with unique ingredients and heat levels, making it a beloved addition to tables worldwide.

belacan (fermented shrimp paste)

Jalapeños offer similar heat with less cost.
Lop the tops off the chili peppers.
Wash your hands thoroughly or wear gloves.
Smush the garlic (crushed is fine).
Dump the peppers into a hot pan on medium-high heat for charring, flipping them only once.
Char the garlic in the same hot pan.
Transfer everything into your grinding apparatus of choice.
Add salt and vinegar to the grinding apparatus.
Grind everything down until smooth.
